Using fresh garlic and herbs from your local grocer, farmers market, or, if you're lucky enough, your own garden, will deliver exceptional freshness and flavour. The unique addition of macadamia oil not only gives this aioli a luxurious, buttery taste but also a smooth texture that will elevate any dish it's paired with.

Ingredients
1 large handful of fresh basil
4 garlic cloves, minced
2 egg yolks
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1/2 tsp pink salt
1 cup Gondwana Macadamia natural macadamia oil

Method
Prepare the garlic: Place the minced garlic in a food processor and pulse until finely diced.

Add the basil and other ingredients: Add the fresh basil, egg yolks, Dijon mustard, lemon juice, and pink salt to the food processor. Pulse until well combined.

Incorporate the macadamia oil: Turn the food processor on and slowly pour in half of the macadamia oil in a thin, steady stream.
Stop the processor and scrape down the sides to ensure everything is well-mixed.

Continue processing while gradually adding the remaining macadamia oil. Process until the aioli is thick and creamy, which should take about one minute.

Finish and store: Serve the aioli immediately or transfer it to a glass container and store it in the refrigerator. Use within a week for the best flavour and freshness.

Tips For The Perfect Aioli
Room Temperature Ingredients: Ensure that the egg yolks and lemon juice are at room temperature before you start. This helps the emulsion process, making the aioli smooth and stable.

Slow and Steady: When adding the oil, do it slowly. Pouring too quickly can prevent the emulsion from forming properly, resulting in a separated sauce.
