This beautiful summer salad can be prepared on a large shared platter or served on individual side plates for an elegant entree.
It is the combination of flavours that makes this salad sing, with the macadamia bush crumb bringing the papaya, prosciutto, mint and chilli together.
A squeeze of lime or lemon is highly recommended before eating and compliments the lemon myrtle in the bush crumb perfectly.
What you’ll need to serve 4
1 medium, ripe papaya
1/2 bunch mint
1 small red chilli, deseeded
100 grams best quality prosciutto, very finely sliced

1 lemon or lime
To prepare, pick fresh mint leaves, thinly slice red chilli and carefully separate the slices of prosciutto.
Next, slice papaya into boat shapes, keeping the skin on helps the fruit maintain the shape. Place Gondwana Macadamia Bush Seasoned Crumb into a shallow dish, then gently press each side of the papaya into the crumb to stick.
Arrange all ingredients on a large serving platter with wedges of lemon or lime.
