Ingredients (Serves 4)

Method

1. Prepare the Prawns

  • Peel prawns, removing shells and heads but keeping the tails on.
  • Devein each prawn by making a small slit along the back and discarding the dark vein.
  • Thread prawns onto skewers, tails facing down. (Tip: this step can be prepped ahead of time.)

2. Grill the Prawns

  • Brush prawns with olive oil or macadamia oil.
  • Preheat BBQ or grill to high heat.
  • Brush prawns again with oil of choice. 
  • Cook for 2–3 minutes each side, turning regularly until pink and cooked through.

3. Add the Crunch

  • Serve as BBQ prawn skewers with lemon wedges.
  • Toss through a summer salad for a more substantial meal.
  • Swap skewers for smaller peeled prawns cooked directly on the BBQ, then coat with crumb.

 

Note: an alternative to skewered prawns is cooking smaller peeled green prawns on a hot grill or BBQ then tossing them through a dish of the macadamia crumb to coat. Serve as a side dish with a fork or toothpick or add to a fresh summer salad.
