Mini Pavlovas With Gondwana Macadamias Decadence Crumb

A very Australian dessert coupled with Australia's native nut, what a winning combination.  

We created these mini pavlovas with Easter in mind but really it is a dessert that can work for so many occasions, Mother's Day, dinner parties, Christmas, New Years, any celebration.

Our home grown macadamias shine in combination with sesame, wattle seed and pops of rosella flower.

This crumb has a true Australian flavour, with a little sweetness.

What you’ll need to make 4 substantial mini pavlovas:

4 eggs (egg whites only needed for this recipe)

250g caster sugar

1 heaped teaspoon of cornflour

1 teaspoon of white vinegar

200ml dollop cream

Edible flowers or seasonal fruit of choice to decorate

 

Line a flat baking tray with baking paper, set aside. Preheat oven to 160'c

Seperate the eggs then beat the egg whites only in a clean bowl with electric beaters until soft peaks form.

Gradually add in the sugar while continuing to beat until all sugar is added.

Continue to beat until the meringue is stiff and shiny.

Using a clean spatular, fold through the cornflour and vinegar.

Use the spatular to dollop four even sized mounds of meringue on to the prepared baking tray. If you prefer you could easily make six to eight smaller ones or one large pavlova. The size of the meringues will impact baking time.

Place tray in oven and bake for about 25 minutes. When cooked, turn oven off and open it leaving the mini pavs to cool in the oven.

When ready to serve, top each pavlova with cream and fruit and sprinkle generously with the macadamia crumb.
